Chocolate Self Saucing Pudding in a mug

 
In July last year I wrote about chocolate pudding in a mug on The Cook's Sponge, and I have to say I still feel the way I did then:









I think I am grateful to a friend who kindly sent me a link to a quick chocolate cake in a mug recipe late one night when it was just the sort of thing I needed. If you haven't come across this before I warn you now, it's dangerous knowledge if you are inclined to "need" chocolate pudding on a regular basis. The main point being that it is cooked in the microwave and it all happens so fast that it's on the plate (in the mug) in front of you before you can question whether or not it really is a good idea.

 

I made a few changes to the recipe I was given and, along with some of you guys, have given it many a test run since then. But somewhere along the line I realised it could be improved even more - by turning it in to a self saucing pudding. Easy as pie.



When we lived in London the topic of self saucing pudding came up once or twice, and none of my friends had heard of it. I began to wonder if it was a New Zealand thing. But then I came across it more than once in local recipe books/magazines, only it wasn't called that. It had an ordinary name like chocolate fudge pudding or something. So if you're not familiar with the name, you may still be familiar with the concept. The sugar, cocoa and water that you throw on to the mixture just before cooking turns in to a lovely sticky sauce that you will find under your pudding once it's done. Great idea.

So below you will find the same recipe with the sauce addition. I've included a second version, as I like to make mine with a bit of glucose and some rice syrup, just to mix things up a little. I also thought such a necessary recipe ought to be found easily, so I've added a quick link over on the right so that you can find it even faster than you can make it. 






Chocolate Self Saucing Pudding in a mug
For one serving                                       

Recipe #1 (using glucose or sugar)                                                                         

3 tablespoons flour                                                            
3 tablespoons glucose or sugar                                          
1 1/2 tablespoons cocoa                                                  
1/2 teaspoon baking powder                                               
3 tablespoons milk                                                             
2 1/2 tablespoons oil                                                          
drop of vanilla (optional)                     

1 teaspoon cocoa 
1 1/2 teaspoons glucose or brown sugar
3 tablespoons hot water

Mix the first four dry ingredients, then stir in the wet. 
Sprinkle the second measures of cocoa and glucose/sugar over the top, then gently add the water

Cook on full power in the microwave for 1 and a half minutes (in a 1100 watt microwave) or a little longer if needed.

Recipe # 2 (using glucose and rice syrup)
                                                                                   
3 tablespoons flour                                                            
1 tablespoon glucose                                         
1 1/2 tablespoons cocoa                                                  
1/2 teaspoon baking powder                                               
3 tablespoons milk                                                             
1 1/2 tablespoons oil  
2 tablespoons rice syrup                                                       
drop of vanilla (optional)                     

1 teaspoon cocoa 
1 1/2 teaspoons glucose
3 tablespoons hot water

  2. I can certify that it's a great relaxant after lawns / baths / dinner / stories / teeth and bed. Make sure to use LARGE cups.

    Luke and I tried this the other night (I read, he made). We doubled the mixture and the cooking time. We had mixed opinions on the results. Luke thought it wasn't sweet enough, even though he had added a sneaky extra tbsp of glucose. I thought it was lovely. I particularly enjoyed the texture, more fudgy the the standard choc cake in a mug we make.

  5. Flavour devine, The coffee mugs were way too small, the over flow was disastorous. but the recipe worked well. Much larger mugs next time and there certainly will be a next time... Thank you

  7. I'm pregnant, and one midnight just whipped up this recipe... It was divine... With vanilla ice cream even better... Instead of using a mug, i used a bowl.. No spill or mess.. Super moist.. Mmmm...
